Default Replacing Holding Tank, Water Heater and plumbing

I have been putting this day off for awhile but the time has finally come. About 6 months ago my wife and I purchased our first Newell Coach. Since then we have completely upgraded the interior but have now moved on to the rest of the coach. I am wanting to replace the holding tank, Water heater and plumbing. My goal is to bring it more up to date then the current setup and also replace the water lines with pex and shark bites. Could someone give me some guidance on removing the old holding tank, water heater and so on. I'm guessing I could go at with the sawzall lol but I hate to cut out more than required.
